Healthy InstantPot Turkey Taco Bowl

We love making tacos, so any spinoff of them is usually a hit in our house! This InstantPot Turkey Taco Bowl was super simple, family friendly, and a great healthy staple to incorporate into your weekly routine! We gave it all a try in the instant pot, which made it super time friendly for us considering we have an always  hungry toddler, all prepped and cooked in less than 20 minutes! Plus I love that you have the freedom to get creative with your toppings, PLUS have enough for leftovers!

Ingredients

  • 1 package Ground Turkey
  • 1 cup Jasmine Rice
  • 2 TBSP Sofrito
  • 1 diced green pepper
  • 1 diced onion
  • 1 cup Chicken/Beef Broth
  • 2 tsp garlic powder
  • 1 tsp salt
  • 2 tsp adobo
  • 1/4 tsp pepper
  • 1 can low sodium black beans

Optional Toppings:

  • Shredded Cheddar Cheese
  • Light Sour Cream
  • Salsa
  • Iceberg lettuce
  • Jalepenos

Instructions

  • Using Saute function on your Instant Pot, brown ground turkey.
  • Add garlic powder, salt, pepper, sofrito, onion, adobo, green pepper, rice, chicken broth to Instant Pot.
  • Put lid on Instant pot and close valve.
  • Set the Instant Pot to cook on Manual/Pressure Cook, High Pressure for 4 minutes.
  • Natural release for 10 minutes, then quick release.
  • Stir & top with optional toppings. shredded cheddar cheese and Serve once cheese is melted.
  • Serve and enjoy! 🙂
