We love making tacos, so any spinoff of them is usually a hit in our house! This InstantPot Turkey Taco Bowl was super simple, family friendly, and a great healthy staple to incorporate into your weekly routine! We gave it all a try in the instant pot, which made it super time friendly for us considering we have an always hungry toddler, all prepped and cooked in less than 20 minutes! Plus I love that you have the freedom to get creative with your toppings, PLUS have enough for leftovers!

Ingredients
- 1 package Ground Turkey
- 1 cup Jasmine Rice
- 2 TBSP Sofrito
- 1 diced green pepper
- 1 diced onion
- 1 cup Chicken/Beef Broth
- 2 tsp garlic powder
- 1 tsp salt
- 2 tsp adobo
- 1/4 tsp pepper
- 1 can low sodium black beans
Optional Toppings:
- Shredded Cheddar Cheese
- Light Sour Cream
- Salsa
- Iceberg lettuce
- Jalepenos
Instructions
- Using Saute function on your Instant Pot, brown ground turkey.
- Add garlic powder, salt, pepper, sofrito, onion, adobo, green pepper, rice, chicken broth to Instant Pot.
- Put lid on Instant pot and close valve.
- Set the Instant Pot to cook on Manual/Pressure Cook, High Pressure for 4 minutes.
- Natural release for 10 minutes, then quick release.
- Stir & top with optional toppings. shredded cheddar cheese and Serve once cheese is melted.
- Serve and enjoy! 🙂
