Cilantro Lime Shrimp Tacos

Have I mentioned that I love tacos?? Y’ALL, I LOVE TACOS! These Cilantro Lime Shrimp Tacos have been a big hit in our house, and honestly were super simple to make which makes them even better! We didn’t have many leftovers because we loved them so much! This would be a great dish for hosting friends or family, or even just to spice up your normal weekly meal prep! Definitely will be adding this one into our regular recipe routine!

Ingredients

For Tacos: 

  • 1 Small Red Onion Chopped
  • Tortillas
  • Frozen Shrimp
  • 1/2 Avocado
  • 1/2 tsp Old bay or Seafood Seasoning
  • 1/4 cup Chopped Cilantro
  • 4-6 Grape Tomatoes Chopped

For Cilantro Lime Dressing:

  • 1 Lime Squeezed
  • 1/2 Avocado
  • 1/2 cup Greek Yogurt
  • 1 Cup Cilantro

Instructions:

For Tacos:

  • •Sauté Shrimp on Stove in Old Bay or seafood seasoning until pink.
  • •Chop Red Onion, 1/2 Avocado, Grape Tomatoes and Cilantro.
  • •Fill tortillas with shrimp and toppings as desired.

For Cilantro Lime Dressing:

  • In a good processor or blender, combine lime juice, Greek yogurt, cilantro, and 1/2 an avocado.
  • Chop until desired consistency achieved. Add water to make thinner.
  • Add onto tacos as desired, serve. 😋
